  • 15 small red or gold potatoes, scrubbed

  • 1 tablespoon of olive oil

  • Sea salt, to taste

  • 1/2 cup of crème fraîche

  • 3 ounces of premium caviar

  • Fresh chives, cut into 1-inch pieces for garnish


  1. Preheat your oven to 425°F (220°C). Toss the potatoes with olive oil and a generous pinch of sea salt.

  2. Arrange the potatoes on a baking sheet and roast until tender and golden, about 20-25 minutes.

  3. Let the potatoes cool slightly, then slice them in half and scoop out a small well from each center.

  4. Dollop a teaspoon of crème fraîche into the well of each potato half.

Presentation: Arrange the potato halves on a luxe serving platter. Top each with a small spoonful of caviar and garnish with chive pieces.

Tip: For added crispness, after scooping out the wells, return the potato halves to the oven for a few more minutes to crisp up the edges before adding the crème fraîche and Caviar Supreme.
